Peel the banana and slice them into thick round slices. Keep aside.
Take the batter ingredients and make a smooth batter without lumps. The batter should not be running, should be slightly thick.
Heat oil in a frying pan. Take a skewer, dip the banana slices in batter and deep fry them in batches till golden. Remove in an absorbent paper and keep aside.
To make the caramel, in a pan add water and sugar and cook on low heat till the sugar melts and caramelised and turns golden. Take off the heat.
Now take the fried banana and dip them in the caramelised sugar, drop them in the ice cold water and immediately take them out.
Drain them and sprinkle sesame seeds and serve as it is or serve with icecream
